Chopped almonds are the edible seeds of the almond tree, a plant that is almost 10 metres tall and belongs to the family Rosaceae. This tree produces compressed oval drupes from which an oblong kernel comes when they ripen. One or two seeds are inside the kernel, protected by a wooden shell; they’re rich in oil and have either a sweet or bitter taste. Chopped almonds are especially used in bakeries, where they represent a key ingredient and an important decoration in different types of desserts (cakes, puddings, nougats and Jordan almonds).
